Fenugreek is used as an herb (dried or fresh leaves), spice (seeds), and vegetable (fresh leaves, sprouts, and microgreens).
Cuboid-shaped, yellow- to amber-colored fenugreek seeds are frequently encountered in the cuisines of the Indian subcontinent, used both whole and powdered in the preparation of pickles, vegetable dishes, daals, and spice mixes such as panch phoron and sambar powder. They are often roasted to reduce bitterness and enhance flavor.

Fenugreek can also be used to season fish and other types of seafood. Fish can be seasoned with curry powder containing Fenugreek or can be placed in marinades that are used to soak the fish prior to cooking. The spice may also be added to spice rubs for meat. Chicken or lamb are delicious when a spice rub.
